Fudgy Peanut Butter Pie--Yummy!!

Ok, so this recipe is from the Sorrento website http://www.sorrentocheese.com/ideas/recipes.html
and it is absolutly the best thing you will ever taste in your entire life!!! I have made it several times and decided it is to good to keep to myself. Enjoy...

Crust:
1 prepared 8" graham cracker crust
6 oz. milk chocolate chips, melted

Filling:
3 tbsp. butter, room temperature
1/2 cups smooth peanut butter
¼ cup plus 2 tbsp. sugar
¾ cup Whole Milk or Part Skim Ricotta Cheese
1 cup heavy whipping cream
1 tbsp. sugar
½ tsp. vanilla extract
PreparationCrust:
With rubber spatula, smooth 2/3 of melted chocolate mixture over bottom of crust and up the sides about ½". Save rest for top. Put crust in freezer while making the filling.
Filling:
With electric mixer, mix butter, peanut butter and sugar for 2 minutes at medium speed until smooth. Add ricotta and mix for 1 minute on medium. In separate bowl, whip cream with sugar and vanilla until it holds a soft peak. Gently fold cream into peanut butter mixture making sure to incorporate all of the cream. Spoon filling into prepared shell and refrigerate for 1-2 hours. With fork drizzle remaining melted chocolate chips over top and serve.

cooooookies!!!

Ok, so I am a cookieaholic. (Is that such a thing..Im sure it is) My husband took our boys to the movies last night and brought me home some cookies from Ben's Cookies. (for all you Salt Lake City dwellers, it in the Gateway) OH MY GOSH!! Those are absolutely the best cookies I have ever experienced. They were so good, I just had to rush to my blog to share the good news. You lucky, lucky people! Alright, I just wanted to let everyone know if you are able to get there, go! You wont regret it! Yum!

Ok, so I am almost finished with Eclipse, awaiting Breaking Dawn. I hope it doesnt suck! Hurry up and make Bella a vampire already. Anyways, I am not sure why I cant stop reading these books. There is way to much Jacob Black in them. Nice kid, but I wanted to read a book about a vampire, not a werewolf. Anyway, how does everyone want the series to end?

The 4 F's and new kids

I hope everyone had a great 4th! Mine was awesome! The 4 F's...food, family, friends and fireworks. I was going to post some pictures of that night, but they all turned out fuzzy. Oh well, it was a great night.

On another note, I just bought tickets to a New Kids on the Block concert. Yes, that is right, a New Kids on the Block concert. I am not sure what I was thinking. I guess when I was 13, that was the only thing I wanted, to go see the New Kids. I asked my mom everyday if she would buy me tickets. In my nightly prayers, I would pray that someday, I would get to go. I guess God really does answer prayers because, well, I do get to go. Fifteen years a little late but, whose counting? Anyway, I guess I bought the ticket just so my 13 year old self would be proud of me. I hope she is excited.

The 4th of July!

So, here it is, the 4th of July, my favorite holiday!!!!!! The best 4th of July I can remember is 2 years ago in Biloxi, Ms. My family and I went to the beach with the rest of the city and lit off our fireworks. Then the casinos that were on the beachfront had a fireworks show. It was awesome...lights everywhere. My worst 4th of July memory was when I was 20 years old. My mom had passed away earlier that year and I was supposed to meet up with my brothers and my dad. Well, no one showed up so I went to a movie all by myself. When I got home from the movie, they still had not shown up so I went on the roof to watch the city fireworks. I tried lighting off some bloom flowers but everytime I lit a match, the wind would blow it out. So, I never was able to light fireworks that year. It was very depressing. But, fear not, that was the only bad 4th of July I have had.
Tonight we are having a street party. We are going to baracade off the end of the street and everyone is going to light off their fireworks. I am excited. Well, I hope everyone has a great day and be safe.

What a day!

Wow, its only Wednesday? Yes, it has been one of those days. My 20 month old barely napped and is rather cranky. None of my 2 boys' friends could play so they have been inside all day and my dog died. Ok, so my dog did not die. I dont even own a dog so that is not even possible. I just thought I would throw that in so you would feel sorry for me. Anyway, on to better news. I am going fireworks shopping tonight. I LOVE fireworks!!! The 4th of July is my absolute favorite holiday! Firework shopping is better than Christmas morning to me (its a close race though). So that is making my outlook on this day a lot more brighter.

On a new subject. My brother Matt has challenged me to a Disney princess duel. He thinks that he is going to encourage my neice to like Belle and hate Cinderella. (I know, what a mean brother) Well, if I have anything to do with it...it will be the other way around. I have already collected a box full of Cinderella stuff for Regina (my niece). She will have so much Cinderella stuff from her Aunty that she will have no choice but to like Cinderella. Game on Matt. Game on!

So I thought this blogging stuff would be easy. You just sit down and type and tell about your day. BUT, this being my first blog ever...its turning out to not be so easy. I want it to be meaningful, funny and full of hope for all who read it. But, the only thing I can think of is my favorite joke about 2 strawberries. Now, I cant tell you the joke now, of course, because it is the only joke I know and if you hear it now, I wont have anything to tell later.
